Random Wednesday: Squash & Snow

I had very serious intentions of starting the Whole30 this coming Monday.  I had been eating healthier/more paleo-ish (is that a word?) this week in order to ease myself into it. And then I had spaghetti squash.

I slaved away in the kitchen for over an hour making the sauce and the squash only to be so incredibly disappointed with the outcome. I forced maybe three bites down and then turned to my trusty graham crackers and marshmallow fluff to comfort me after my horrible experience.

Spaghetti squash is not pasta, you guys. It is actually nothing like pasta. It's sweet. Pasta is not sweet. So this experience totally threw me off course. I LOVE pasta, and I was counting on this to be a legitimate substitute.  I'm really questioning whether or not I can do this now...

In other news, that crazy amount of snow is finally starting to melt a bit!  It really was beautiful... for the first 24 hours at least. And now, I would just really like for Spring to make its arrival! I sort of enjoy the colder temps through December. It's all festive and everything. But right around this time every year I start to question my sanity.  Who chooses to live in these conditions? Homegirl needs some sunshine and 70+ degree temps STAT. Southern California isn't sounding all that bad... who needs a visitor?

Ok that squash picture makes me want to gag lol I'm def never trying it!

And AMEN on the snow front. I was liking the colder weather/snow then we started having nicer, sunny days like yesterday and I'm over it. Also - I'm tired of wearing layers! I'll so go to CA with you!

Bummer!!! I heard the spaghetti squash is good. There is no way I could live through the Whole 30 challenge. And i am so sorry for all the snow and cold. If you find someone who will let you come visit in Cali, lemme know...I wanna go too! ;) Thanks for linking up!

We're having spaghetti squash this week to! The first two nights we did a marinara sauce + eggplant combo with spinach and fresh tomatoes. DELISH! Tonight, I'm going to use the rest (the batch was SO BIG) to do a Mexican casserole with it using ground turkey, diced tomatoes, onion, green chiles, corn, black beans, cilantro, and fresh salsa. I love how versatile and easy this dish is!

I've never had spaghetti squash because it's always sounded weird. Good to know it is hehe!

No me! me! visit me in the OC by the beaches...hahaha!! Sorry the squash wasn't too good. I can't live without my carbs...I don't care if gluten turns out to be poisonous I cannot not eat carbs/ bread etc

I've had spaghetti squash (at a resturant) and it was so delicious... then over the holidays while I was home, I tried to make it for my family - major fail. Such a bummer!

The spaghetti squash tweet cracked me up. There are some things you just can't replace and pasta is one of them! Even the whole grain pasta tastes funny.
